Crémant is the hidden gem wine of France. Take the same grapes that are grown in Champagne, the same soulful and detailed French winemaking expertise, and the same production process as the best sparkling wines in the world, and you have Crémant. These wines are often a fraction of the price of Champagne as well, which makes them a killer buy.
This sparkling is made by the winemaking team of Bénédict et Stephane Tissot, who have been making incredible wines in the Jura for the last twenty years. They’re heavily invested in biodynamic viticulture–seeing their vineyard as a living organism, treating it with respect and care.
This Crémant is a blend of Jura grapes, based on Chardonnay, which is unique in the Jura. Rather than the fresh apple fruit of a white Burgundy grown one hour to the west, these Jura wines have a wonderfully cidery quality. But there’s nothing tired or faded about this wine.
Aromatics in this wine are striking, leading with a nutty, soft fruit profile of dried yellow apple, quince, and fresh white mushroom. Pronounced nuttiness is a key characteristic of this wine too, owing to its time spent under a voile of yeast, which occurs naturally in eastern France. Notes of marcona almonds, sea spray and dried yellow flowers round this out. These bubbles are fresh, lively and tart, perfect for pairing with all sorts of dishes.

We’ve been a fan of hers for a long time, and we highly encourage you to go check out Musang which just opened earlier this year. She’s an excellent interpreter of Filipinx cuisine, which you’ll see with these recipes. They are made to be user-friendly and they’re absolutely delicious.
Musang’s Talong, Kamatis at Manga
This roasted eggplant, mango, and tomato salad is a perfect pairing with sparkling wine for a few reasons. Soft, creamy-textured vegetables love the snap of sparkling wine. Also, the acidity in this dish is very bright, and so is the tartness of this dish. They’re made for each other.
Sour Cream and onion chips with caviar.
Yeah, we said it. And no, there’s no recipe. You’ll just have to figure it out. It’s really tasty.
