I first had this wine a few years ago with a member of the Michlits family in Seattle. They’ve been running a 2000-hectare farm in eastern Austria for years now. Everything they do is completely biodynamic, which means they take special care to create preparations to enrich their soil, omitting all synthetic pesticides and fertilizers, and seeking to create harmony among their farmed animals and crops.
Prosa is a pétillant naturel sparkling wine, made from a field blend of red grapes that grow in the Burgenland region on the shores of the large, shallow lake Neusiedlersee. It’s one of the most scrumptious things I’ve drank in a long time, and I think you’ll agree when this pink-hued, frothy goodness greets your palate.
This wine is a walk through a thriving garden: notes of sweet cherry tomato, strawberry leaf, basil, and lemon thyme lead to ripe white cherry, kiwi and peach yogurt. A bubbly, crisp finish seals the deal.
